Now, I don't really know how to answer your first question, as armies really don't provide "zones of control" when in territories. However, you can build forts in any territory, regardless of ownership, as long as you have the money.

You can't "rotate" the camera on the campaign map, but on the battle map if you have the camera set into Total War mode (ESC -> Camera Options) you can rotate the camera by pushing the cursor to the edge of the screen or by pushing the left or right arrows on your keyboard.

Left click on the enemy army. It will show how far that army can move on its turn in yellow.

If you click on a unit or army of your own, it will show (in green) the areas it can move to. If you click on a unit or army or your own that has enough movement to approach an enemy unit/army, the green area changes to a reddish/brown color immediately surrounding the enemy army. Those reddish/brown areas are the zones of control for that unit. You can move into that zone of control, but you won't be able to move out of it until your next turn. Cities also have zones of control which you can see when you are close enough to an enemy city.

All of the information on manipulating the battle camera is described in detail in the Tutorial campaign, as well as in the interface detail within the game's main menu.

That's not it. He means the areaaround the army that enemy armies can't march trought without having full MP when starting moving. And you can see it by left-clicking on one of your armies that is able to move to the enemy army, you will see an area in grey on the edge of the green, around the enemy army. That is their control zone.

EDIT: chonamen is too quick!

Maybe if you've got the default camera mode on, but I've never had to do it if I've had the camera set to TW mode

Don't you misstake it for scrolling left/right then? that is what it does on my comp, and also what they say in the tutorial. If you wan't to rotate, you press down the mouse button too.
