These type of designs can be seen in many maps. This is related to Lord Yoshi's editor tricks. All to do with achieving the maximum limit for placing rocks.
This allows custom hop/diary farms to be made as well as making snow like features, making fences etc.
This method works for both Crusader and Stronghold.The zip file has a map with such designs along with the instructions.Primarily for map makers/scenario designers.

If I had to guess, I'd say it involved magic eraser, but I'll have to find out for myself. Also, are those farms functional?

No There're not.Such farms are just for eyecandy purposes. A good thing about such farms is that they can't be destroyed by enemy units.

Ah, I use the magic eraser to make huge farms - I'm sure that Lord Ako using the same tactic as I do to manage hop and wheat farm to be placed higher than the useal allowed limit ;)
But still this looks very nice!
